Seems there may be a bigger issue as I cannot even jog around when I load uccnc without the stepcraft profile.

Ofcourse you can't. The stepcraft profile has the settings for the Stepcraft machines, the default profile does not.

Sorry, but really you can't upload 30MB files here, there is a limit of 0.5MB, otherwise we would run out of space fast.
Maybe if you have a website or google drive or dropbox or something like that then upload it there and post the link here.

I've downloaded and check your files and the issue is that your screenset file is broken.
There are some random text inside the file, see the attached printscreen of a part of the file.

Well certainly is isn't there, Can this be deleted or do you think there is data missing from the file? What would cause this as this file has been untouched since I got the machine?

It looks like there are 9 lines missing, which means that there will be 9 images missing in the screen, if you delete them.
If you delete them, you'll probably see elements with missing or incorrect images. With the Screen editor, you can select those elements, and fins out there picture number, which should then allow you to add the images with the correct number.

Or maybe contact Stepcraft for a new copy of the file?
