Does anyone know if its possible to define home using one of the offsets, such as G92 and if its possible, how?
I want to define "home" to a smaller area than the far back left corner. I can get the exact "machine coordinates" which I would like to use as the "home" position.
Any help or ideas would be gratefully accepted.

You can do this using the Write Offset on Homing and Homing Backoff options on the Axes setup pages.

Am I correct that I get the offsets I need from the offsets table? If I try it on G59, will that leave G54 as it is so that I don't screw the current settings in case it doesn't work.

The Home Offset value is the position of the home switch in machine coordinates.
For example, if you set the X axis home offset to 10, then the X axis home switch position will be X=10 in machine coordinates. If the machine homes in the negative direction, and you set a home backoff of 5, then the machine will be at X=15 after homing (in machine coordinates), and be 5 units away from the switch.

I have been playing with your suggestions and I think I'm must be missing something.
I have attached a screen shot of the the machine coordinates of where I want the gantry to be when told to " home"
When you have a chance could you tell me what coordinates to put where.
