Controlling a fan directly with the analog output will not work, because the output is an opamp with limited current capability,
if I remember correctly it can supply upto 50mAmps per channel which is not likely to be enough for even a small fan.
Also the step up converter has a limited current capability, it has the current limit set to 100mAmps.
You could drive a transistor with it though and use an external 12V power supply if the fan is rated to 12V,
or use a 5V rated fan if you want to use the same PSU which supplies your UC300ETH.

Or you could drive an NPN transistor or N-mosfet with a digital output PWM.

Thanks for the answer the Amps are indeed to low, will use a step up on the 5V Supply i have its 6AMPs so it should have enough room to spare to power 2 case fans for the enclosure ;)
