Seems like an odd coincidence, I would doubt there is a real interaction between your VFD and UCCNC not responding. If the ethernet connection is lost, UCCNC will close, but will warn first with a popup.
What video card is in your computer, if it is while you are viewing and spinning around the view port, maybe it is video driver/card related.

When you say you have it enabled, do you also have it set to 'show on startup' so you get the plugin to show, or are you leaving it enabled in the background but not using it or showing it?
Please disable ProbeIt in the plugins menu, and verify if your problem is still there or not. I'm still fixing some bugs in ProbeIt, but if you're not using it actively, it should not be crashing UCCNC in any way. If your actively using ProbeIt and it stops responding, let me know please, shoot me an email or use the ProbeIt thread in the plugins part of forum.
