Spindle control through MODBUS RS485

Hi,
I'm considering upgrading from Mach3/USS to UC300ETH-5LPT. I really like the UCCNC interface as it works great on the 10" touchscreen I plan to use.
Currently I control the spindle via Baldor VFD using MODBUS over RS-485. This has worked really well.
There are 2 pulley ratios which I select in Mach3, and a Brain I wrote outputs the correct motor speed for the required spindle speed/pulley selection, and also spindle CW/CCW/OFF registers.
So my question is, what is the best way to approach this in UCCNC?
And another quick one - can UCCNC be put into full screen mode, by which I mean true full screen without the application bar at the top.
