I tried a very small touchscreen display for UCCNC and I couldn't stand it. I couldn't access the jog panel overlay, which required me to hover with the mouse. And this was the only part of the entire UI which it isn't possible to customize. The touchscreen I used was the size of a handheld console, so I couldn't press the tiny buttons accurately.
If you use a big display it would be usable. If you used the on-screen keyboard you wouldn't need any other peripherals. since I edit gcode and use the CAM software, I'd want other peripherals anyway. So when I use the machine now I've got a keyboard, mouse, a computer monitor on an arm, and a DOY jog controller with a handwheel. The handwheel provides a satisfying tactile experience. The only other peripheral I would like to try is a trackball mouse.
