Could anyone explain the digitizing process

Being a plasma cutting guy (and using the table to drill circuit boards  ) I've had zippo to do with 2D part digitizing in the XY axis only. However, I'm interested in learning this. To be more precise, digitizing of freeform shapes, not holes, etc.

I've read the manual but don't see any instructions regarding positioning a probe before starting. Do you simply jog the probe very close (but not touching) to the edge of the probed part, and when probing starts the probe moves sideways in each direction until it is tripped ?? I also assume the software knows when probing is finished because it ends up back at the start point ??

Once you have the 2D point cloud file, how is this converted into vector line work. I've Googled but I'm not having much luck. Perhaps I'm using the wrong search phrases because officially a "point cloud" seems to be 3D whereas I'm only wanting 2D.
